1 Bring 3 cups of water to a boil in a deep saucepan. Add masoor dal or moong dal and ¼ teaspoon turmeric. Reduce heat to medium and cook, uncovered, for about 20 minutes, until dal becomes creamy (if the water evaporates during the cooking process, add up to another cup). Set aside.
2 Place oil in a saucepan and heat over medium heat. When the oil is hot, but not smoking, add asafoetida powder, curry leaves, red chili pepper, fenugreek seeds, mustard seeds, and urad dal. Cook, covered, until mustard seeds pop and urad dal turns golden brown, about 30 seconds.
3 Add peeled pearl onions and tomatoes. Cover and cook, stirring often, for about 5 to 7 minutes, until onions are tender.
4 Add remaining ¼ teaspoon turmeric, sambhar powder, and salt and stir well with the onions and tomatoes. Cook, stirring, for 2 to 3 minutes.
5 Stir in tomato sauce, tamarind paste, cilantro, and 1 cup of warm water. Let onions cook in sauce over low heat, covered, for about 3 minutes.
6 Add the cooked dal and about 2 cups of warm water (making it the consistency you like). Cover and cook for 3 minutes. Add cilantro. Stir well and serve.
